Ingredients

Serves : 4
  • Rice vermicelli 200 gms


  • Spring Onions white Chopped 1/2 cup


  • Green peas 1/2 cup


  • Carrot diced 1/2 cup


  • Capsicum 1/2 cup


  • Coriander Finely Chopped 1/2 cup


  • Sri racha sauce - 1-2 tbsp


  • Brown Sugar/Honey 1 tbsp


  • Juice of 1 lemon


  • Sesame Oil /Olive Oil 1 tbsp


  • Garlic clove 1-2 finely chopped

Directions

  • Soak vermicelli in water for about 5 mins in a microwave safe bowl with a lid on it.
  • In my 900w microwave on full power it took 4-5 mins to cook the vermicelli .let them soak in hot water for additional 5 mins more if not cooked completely.
  • Keep aside vermicelli to cool for 5 minutes or to prevent from over cooking run it through tap water.
  • In a wide bowl microwave safe bowl add veggies with vermicelli and dressing on it and mix well. Toss the veggies with vermicelli.
  • Serve hot with chopped Coriander on top.
